In case you haven’t discovered Republic of Vermont – sugar makers, silviculturalists, and cultural creatives based in the town of Goshen – now is your chance. Ethan West and his partner run this business, and they create some of the tastiest maple syrup (and textiles – witness their beautiful t shirts) in the Green Mountains. Following them on Instagram is a true joy – their daily photos are a reminder of the traditional land-based values that make Vermont unique, combined with a beautiful storytelling aesthetic.

Our sugarhouse is where all of the products are made. In the spring, we boil sap from our maple trees into pure Vermont maple syrup on our wood fired evaporator and in the early fall, the air is sweet as we extract and bottle the year’s crop of Vermont raw honey. The rest of the year is spent managing our honey bee colonies and working our forest land preparing for the next spring sap run, but you can often find us inside the sugarhouse bottling maple syrup or making our own granulated maple sugar!
